You won't have any issue fitting a 285/70R17 on a 17x9 wheel. If you are worried about combined wheel and tire weight then I'd suggest getting a C rated tire as they will almost always weigh less than an E rated tire.
I think you'd want an offset of +12 or +20 depending on how much poke you want.
